Spending time with my family was the best way I could have celebrated Easter in 2019. And in 2020.  And I'm looking forward to 2021! I'm even saying that when it included cooking.  Not just baking, but cooking...like real food.

So it's almost Easter and I haven't had a chance to make anything super creative, I'll tell you why later.  However, one of my favorite desserts for Easter (or anytime) is Carrot Cake.  And with this adorable chocolate mold, the carrot topped cupcakes were created!

PYO Cookie!

Today I'm talking about the PYO Cookie.  Are you wondering what is a PYO Cookie?  Don't feel bad, for quite awhile I didn't know what that meant, so I'm here to tell you and you'll never be left in the dark again.  PYO means Paint Your Own Cookie!  Yes, it's like a coloring page, only on a cookie and you can eat the page.  They've been around for awhile and it took me a longer while to create them.  Now I'm thinking, what have I been waiting for?

Easter Egg Rosettes!

It's been years since I've made rosette cookies.  Or maybe they're just called rosettes?  Do you even know what I'm talking about?  Chances are your mom or grandma made them but I doubt many of you have.  I came across the egg shaped rosette iron and colored powdered sugar, do I need to say more?

Cream Cheese Easter Egg Mints!

Have you ever had a cream cheese mint?  If not, you're possibly missing the creamiest mint around.  I love the texture and the mild mint flavor.  Plus the cute little egg shape doesn't hurt.  Again, I found the perfect mold at Michaels and didn't buy it.  When I started to make the mints, I realized the little egg mold would be perfect.  So when you see that little mold, buy it the fist time and save yourself the trip.

Rice Krispie Treat Easter Basket

I've made all kinds of Easter Baskets in my life, but this is the first time I've made Rice Krispie Treat Easter Baskets!  I know, can you believe it, why did I wait so long?  At first I was going to pipe the frosting on with a basket weave tip, but then decided to make it quick and easy.  My imprint rolling pin (I bought for who knows what) came in pretty handy.

It is because of my daughter's love for buttercream I had to find a way to stencil on cookies.  I beg and plead, but no matter how hard I try, she still wants buttercream cookies!  So yes, stenciling on buttercream CAN be done and I'm going to show you how.

Moss Covered Chocolate Bunnies!

You have got to see what I did with my chocolate bunnies.  Besides eat them...okay, I haven't eaten them yet, but their days are numbered.  It helps they're so cute, I don't want to take a bite.  What I want to do, is show you because you're going to agree with me, I just know it.
 
What started out as a mini moss bunny, turned into the cutest moss bunny.  I'll tell you more about the mini moss bunnies in a minute, but for now let's focus on this little guy!

I've been working on so many ideas in my mind, my body doesn't have time to catch up.  I finally opened the drawer and put away all the things that were left to be made into spectacular Valentines.  They just didn't happen. 

Now I'm filling my drawer with ideas for Easter and some are more complicated than others.  I decided this is not the week for anything complicated which is why I made the easiest Rice Krispie Bunnies ever.  You don't need any special pan or skill and you can have them done in a pinch!  Literally.

Spring Bonnet Cakes!

If you are looking for a sweet Spring or Mother's Day treat, these bonnets fit the bill. Do you remember wearing an Easter Bonnet? Growing up on a farm in Nebraska I remember how special every Easter was. Plus it was the first time I got to wear a little white sandal with a chunky heel to church, I remember them well. This has nothing to do with these cakes, because they are Easter Bonnet Cakes not Chunky Heel Cakes.  But they are just as cute!

Today it's all about the bunny, the Easter Bunny to be exact. And it involves chocolate, colored chocolate, dark chocolate, milk chocolate, well, you get the idea right?

When I received a note from Hani asking if I would like to participate in an upcoming Easter project, I was ready to hop to it!  This was the challenge...Hani of Haniela's, Beth of Hungry Happenings and I were to all use the same Wilton Mini Silicone Bunny Cake Mold to create something for Easter.  Here are our findings... Easter Animal Crackers!

I have been told, there may be a few people in this world who do not like chocolate, I'm certainly not one of them!  Today I've hopped over to Hungry Happenings, sharing something for those who don't like chocolate.  Years ago I made homemade animal crackers for my Circus Party and with all the treats offered, they were one of the favorites.  I thought they would be great as little Easter cookies as well.  So here they are!
